Easy Skillet Pork Chops
Ingredients:
2 large pork chops or 4 small/medium chops
2 apples cut into slices (Gala or Granny Smith are best) Do not peel the apples. The peel has lots of fiber and nutrients our bodies LOVE!
1 small red onion thinly sliced
2 Tbs of olive oil
3/4 cup of low sodium organic chicken stock
1 tsp of whole grain dijon mustard
1 Tbs of fresh chopped sage
1/2 tsp of fresh chopped rosemary
1/2 tsp of fresh chopped thyme
1/2 tsp sea salt
1/4 tsp of black pepper
Directions:
Take pork chops and season with salt and pepper. In a large skillet (cast-iron is preferred) add olive oil and heat over medium-high heat. Add pork chops to the pan and allow to dear for 3-5 minutes per side or until pork chops are mostly done. Remove chops from pan and set aside. Add chopped onion and apple to the skillet and stir to evenly coat with olive oil and chop drippings. Mix together chicken stock and mustard and set aside while apples and onions cook. Add all spices to the skillet and stir together. Add in chicken stock and mustard mixture and combine. Allow all of this to cook until the apples and onions tender. Nestle the chops back into the skillet and cook for an additional 2-3 minutes. Plate and enjoy!
