Chocolate Chip Cookies (Vegan & Gluten Free)
Makes: 14-16 cookies Prep Time: 15 min Cook Time: 10 min Total Time: 25 min
Ingredients:
3/4 cup of solid coconut oil
1 1/4 cup of Madhava coconut sugar
2 tsp of vanilla extract
1/4 cup of unsweetened dairy free milk of choice
2 1/4 cup of Bob’s Red Mill Gluten Free all purpose flour*
1 tsp baking soda
1/2 tsp of sea salt
1 cup of Enjoy Life semi sweet chocolate chips
1/2 cup of Enjoy Life dark chocolate chips
Directions:
Preheat your oven to 375˚F and line 2 cookie sheets with parchment paper. In a large bowl add in coconut sugar, coconut oil and vanilla and mix together until smooth and creamy. Add in the milk and mix until well combined. In a separate bowl mix together flour, baking soda and sea salt. Slowly add dry ingredients to wet until a thick dough has formed. Fold in chocolate chips.
With a medium cookie scoop, portion out 14-16 cookies onto the parchment lined baking sheets. Space the cookies about 1 inch apart. Once cookies are scooped out press down on the cookie dough mounds with your hands. Basically shape them as thick or as thin as you would like. Make sure you still leave room for them to spread while baking. Pop cookies in the oven for 8-10 minutes. If you press them thinner they will need less time in the oven. Once cookies are done baking remove from oven and allow them to cool for 10 minutes.

*Can swap gf flour out for almond four for a chewier cookie
