Four Ingredient Brownies

Ingredients:⠀

 

For the Brownies:⠀

3 eggs ⠀

1 cup @madhavasweet coconut sugar ⠀

3/4 cup unsweetened cocoa powder ⠀

1-2 scoops of @furtherfood collagen⠀

1 tsp baking powder⠀

For the frosting:⠀

1 8oz package of cream cheese or @kitehillfoods dairy free cream cheese ⠀

1/4-1/2 cup of natural smooth peanut butter or favorite nut butter⠀

1/4 cup of @madhavasweet coconut sugar ⠀

Directions:⠀

In a large mixing bowl whisk eggs using a hand mixer. Add coconut sugar and mix until smooth. Sift cocoa powder into the mix to make sure there are no lumps. Add collagen and baking powder and mix until a thick smooth batter is formed. Pour batter into a greased 8x8 baking dish. Bake at 350 degrees F for 20 minutes or until middle comes out clean with a toothpick. Allow Brownies to cook completely before frosting. To make frosting place room temp cream cheese and room temp PB into a mixing bowl. Blend with a hand mixer until well combined. Add coconut sugar and blend. Spread on cooled Brownies. Place Brownies in fridge for 20 minutes to allow frosting to set. Makes 12 Brownies. ⠀
