Blueberry Chia Jam
ingredients:
3 cups of fresh blueberries washed
2 1/2 Tbs raw local honey
2 Tbs fresh lemon juice
2 1/2 Tbs black chia seeds
Directions:
In a sauce pan mix honey and blueberries until well coated. Add in lemon juice and bring mixture to a boil over medium heat. Allow to simmer for 3-5 minutes. Mash the blueberries and turn heat down to low. Add in chia seeds, turn heat back up and bring back to a simmer until Jam thickens. Store in an airtight mason jar in the refrigerator for up to two weeks. Makes roughly 6 oz of jelly.
