Coconut Flour Waffles
Breakfast on Saturdays is some serious business up in the Mills' house. Since getting married, Brad and I have made it a tradition to make an elaborate breakfast (usually waffles) and enjoy it in bed with a piping hot, fresh cup of joe (you can find my favorite brew here). Our weeks are super busy, so it's nice to have a morning where we can take it slow and enjoy quality time together.
Since we spend every Saturday indulging in sweet, breakfasty goodness I decided that I needed to come up with a healthier alternative to enjoy. My teeny, tiny body would be the size of the house if I chowed down on super carby, processed foods EVERY weekend. Now don't get me wrong your girl totally has a "treat yo-self" moment every once in a while but it's nice to have a guilt free option that is just as tasty!
Cue these delightful coconut flour waffles in all their fluffy, golden brown glory! I can just hear the angels in Heaven singing the Hallelujah Chorus... (Ahem) Anyways, these babies are not only the PERFECT guilt-free morning treat but they are packed with healthy fat's, protein, and fiber!

Ingredients:
4 eggs separated
2 Tbs of Perfect Supplements coconut oil melted
1 tsp vanilla extract
1/2 tsp baking soda
1/3 cup unsweetened dairy free milk of choice (you can find my favorite dairy free milk here)
1/4 cup Bob's Red Mill coconut flour
Directions:
Separate the egg yolks from the whites and place the whites in a large bowl. Whip the whites until stiff peaks form. In a separate bowl whip together remaining ingredients. Once well combined carefully fold batter into whipped egg whites. Grease waffle maker and pour half of the batter into the waffle maker. Cook until outside is slightly crispy. Top with desired toppings and enjoy!
