Easy Healthy Whole Wheat Pita
Ingredients:
1 3/4 Cup of water (maybe up to 2 cups)
2 tsp of active dry yeast
2 1/2 Cups of King Arthur White Whole Wheat Bread
1 1/2 tsp sea salt
1 Tbs of olive oil
Directions:
In a large mixing bowl add water and yeast and whisk together. Allow the mixture to sit for 5 minutes so the yeast can activate. Add the 2 1/2 cup of flour, salt and olive oil and mix together until a smooth dough forms. If using a stand mixer allow the dough to manually mix on medium speed for roughly 8 minutes. Once dough forms add about 1/4-1/2 cup of flour to a clean working surface. Kneed for 5ish minutes. Once dough has been kneeded make it into a circle and place into an oiled bowl, flip the dough ball so it’s coated in oil and cover with a clean dishtowel for an hour. This will allow the dough to rise. After an hour remove dough from the bowl and cut into 8 equal pieces. Roll each piece into a ball with your hands. Flatten one ball at a time with the palm of your hand. With a floured rolling pin, roll each flattened circle into about an 8-9 inch circle that is about 1/4 inch thick. Place a cast iron skillet over medium heat and add olive oil to coat the pan. Place one dough disk into the pan and allow to cook until bubbles form and it becomes golden brown (about 2-4 minutes). Flip and cook for an additional 2 minutes. Place pita on a paper towel to cool. Sprinkle warm pita with sea salt. Serve warm with fresh hummus.

Notes:
This is fresh pita so it will only stay good for 5-7 days. Can be stored at room temperature in an air tight container.
