Buffalo Chicken & Ranch Cauli-Rice Bowls

Ingredients for the Buffalo Chicken:
1.5-2lbs of boneles, skinless chicken breasts
1/4 cup of MMW Clean Buffalo Sauce (recipe here)
1 Tbs of MMW Ranch Seasoning (recipe here)
Ingredients for the Ranch Cauli-Rice:
3 10oz bags of plain frozen riced cauliflower
1 Tbs of olive oil
1-2 Tbs of MMW Ranch Seasoning
1/2-1 Tbs of fresh garlic
salt & pepper to taste
Directions for the Chicken:
Take boneless skinless chicken breasts and place them in the instant pot. Add buffalo sauce and ranch seasoning and coat. Cook in the instant pot on the chicken setting for roughly 15 minutes. Once chicken has cooked allow the pressure cooker to sit for 5 minutes before releasing the steam. Once steam is released remove chicken from the instant pot and shred. Add additional buffalo sauce and toss.
Directions for the Ranch Cauli-Rice:
Take rice cauliflower out of the freezer and pour directly into an oiled skillet. Cook over medium high heat until the cauliflower is no longer frozen (roughly 10 min). Add in fresh minced garlic and cook until fragrant. Add in ranch seasoning and toss until rice is well coated. Taste and season with salt and pepper if needed.
Assembling the Bowls:
Take 1-2 cups of cauliflower rice and pace in a bow. Top with 1/4-1/2 cup of chicken. Add 1/2 avocado and additional buffalo sauce if desired. Enjoy!
