Easy Shrimp Tacos & Mango Salsa
Servings: 6-8 tacos Prep Time: 10 min Cook Time: 6 min Total Time: 16 min
Ingredients for the Shrimp:
1 lb of large peeled, deveined and de-tailed large shrimp
1 Tbs olive oil
1/2 tsp salt
1/2 tsp pepper
1/2 tsp smoked paprika
1/2 tsp chili powder
Ingredients for the Mango Salsa:
3 mangos cut into cubes
1 red bell pepper chopped
1/4 purple onion chopped
1 jalapeño with the seeds removed, finely chopped
1/4 cup of fresh chopped cilantro
juice of one lime
Directions for the Shrimp:
Take shrimp and rinse off under cool water. Lay shrimp to dry on a paper towel. Pat dry with a second paper towel.
Sprinkle seasoning on shrimp and toss to coat. Add 1 Tbs of olive oil to a large skillet over medium high heat.
Lay each seasoned shrimp individually into the pan. Cook for 3 minutes per side. Once cooked through, remove from the pan and allow to cool for 5 minutes
Directions for the Mango Salsa:
Add all chopped ingredients into a large bowl and mix together.
Directions to Assemble the Tacos:
Add a heaping spoonful of mango salsa to each taco.
Place 4 shrimp in each taco.
Top with fresh avocado and crema
