Jalapeño Chicken Stew
Servings: 6 Prep Time: 5 mintes Cook Time: 3-6 hrs Total Time: 6 hrs 5 minutes
Ingredients:
1 lb of boneless skinless chicken breasts (about 3 chicken breasts)
1 medium onion chopped
1 medium bell pepper chopped
1 - 2 jalapeños deseeded and chopped
1 - 2 Tbs minced garlic
2 cups of no sugar added chicken stock or broth
1 Tbs of chili powder
2 1/2 tsp cumin
1 tsp sea salt
1/2 tsp black pepper
1 13.5oz can of full fat coconut milk
Juice of 1/2 lime
1/2 cup fresh cilantro chopped
Directions:
Place chicken breasts at the bottom of your crockpot. Add chopped onion, bell pepper and jalapeño on top of the chicken. Sprinkle garlic and seasonings over the chicken and vegetables. Pour the chicken broth on top and place the lid of your crockpot on top. Cook on low for 6-7 hours or on high for 3-4 hours.
Once time is up add in coconut milk, lime juice and cilantro and stir to combine. Cook on high for an additional 30 minutes.
Stir one final time and serve warm. Top with fresh cilantro, avocado and a squeeze of lime juice.
