Chocolate Chip Cookie Dough Fudge

INGREDIENTS FOR THE COOKIE DOUGH LAYER:
1 1/4 cups of almond flour
1 Tbs coconut flour
1/4 cup + 2 Tbs pure maple syrup
5 Tbs almond butter (creamy)
2 1/2 Tbs of coconut oil (softened or melted)
2/3 cup of enjoy life mini chocolate chips
INGREDIENTS FOR THE CHOCOLATE GANACHE LAYER:
1 cup of enjoy life dark chocolate chips
1/2 Tbs of melted coconut oil
2 Tbs of almond butter (creamy)
DIRECTIONS:
Line an 8x8 baking dish with parchment paper or foil.
In a medium bowl add in almond flour and coconut flour and whisk to combine. Next add in pure maple syrup, almond butter & coconut oil and whisk until well combined.
Mix until a dough forms. Fold in the chocolate chips. Evenly press the dough into the lined baking dish. You do not need to freeze this layer before adding the ganache layer.
In a microwave safe bowl add in all the ganache ingredients and heat in the microwave in 30 second intervals. Do this until all the chocolate chips are melted (be sure to stir in between each interval. Pour ganache over the cookie dough and smooth evenly until one layer has been made.
Place in the freezer for 25 minutes for the bars to set up. Slice into 16 bars. Store in the freezer.

NOTES:
*You can swap out the almond flour for equal parts all purpose gluten free flour or 1 cup of oat flour.
