The BEST Lactation Cookies
Servings: 12 - 14 Prep Time: 5 Min Cook Time: 10 Min Total Time: 15 Min
Ingredients:
1 2/3 cup of oat flour
3/4 cup dried old fashioned oats, dry
1 cup of coconut sugar
1/4 cup brewers yeast
1/2 tsp baking soda
1/4 tsp sea salt
1/4 cup ground flaxseeds
1/2 cup water, room temperature
1/3 cup melted coconut oil
1 tsp vanilla extract
2/3 cup dairy free dark chocolate chips
Directions:
Mix 1/2 cup of water and flax meal until well combined. Sit aside for 5 minutes to thicken
In a large mixing bowl combine oat flour, oats, brewers yeast, coconut sugar, salt and baking soda. Whisk to combine.
Add in flax meal & water mixture, coconut oil and vanilla and mix until a dough forms. Fold in chocolate chips.
Line a baking sheet with parchment paper. Scoop out cookie dough with a medium cookie scoop. This recipe should yield 12 - 14 medium to large cookies. Set the cookies 1 - 2 inches apart and bake at 350˚F for 10 minutes.
Allow cookies to completely cool before storing. You can store in your freezer for up to a month.
