The BEST Healthier McGriddle Recipe
Serves: 6-8 Prep Time: 30 min Cook Time: 10 min Total Time: 40 mim
Ingredients For The Maple Glass:
1/2 cup of pure maple syrup
Ingredients For The Pancakes:
1 cup of finely ground almond flour (buy my favorite here)
2/3 cup of tapioca flour (buy here)
1/2 cup of coconut flour (buy here)
1 tsp baking soda
1/2 tsp baking powder
6 large eggs
1/2 cup unsweetened dairy free milk of choice
2 Tbs of Madhava Sweet agave syrup (buy here)
1 tsp of paleo compliant vanilla extract
Ingredients For The Chicken Sausage:
1lb of lean ground turkey or chicken
2 tsp poultry seasoning
1/2 tsp fine sea salt
1/4 tsp black pepper
1/4 tsp ground nutmeg
1/8 tsp allspice
1/4 tsp fennel seeds
1/8 tsp cayenne pepper (optional)
1/8 tsp red pepper flakes (optional)
Ingredients For The Eggs:
6-8 whole eggs, large
Directions For The Maple Glass:
Add maple syrup to a small or medium pot. Heat over medium high heat.
Once syrup begins to boil turn down the heat and stir constantly.
Using a candy thermometer, bring the maple syrup up to 265˚F.
Once the syrup reaches 265˚F, remove from heat and pour over a parchment paper lined baking sheet (jelly roll pan works best).
Place in the freezer to solidify for 30 minutes.
Once hardened crush into small “glass” shards.
DIRECTIONS For The Pancake Buns:
In a large mixing bowl add all the dry ingredients. Whisk together to combine.
Add in eggs, milk & agave. Whisk until a smooth batter forms.
Heat a medium griddle to medium / high heat. Grease the griddle with coconut oil.
Take two medium to large mason jars lid and grease well with non stick cooking spray.
Fill the lid half way with pancake batter. Sprinkle maple glass in the center then adding another spoonful of batter to the top to cover.
Cover with a large pot lid and allow to cook for 5 minutes before flipping.
Flip and cook remaining 3-5 minutes. Remove from heat and allow to slightly cool.
DIRECTIONS FOR THE Eggs:
Using a smaller mason jar lid (greased well), crack your egg into the mason jar lid.
Cover and cook until desired yolk consistency.
DIRECTIONS FOR THE BREAKFAST SAUSAGE:
Add all the seasonings to the sausage meat and mix until well combined.
Make sausage patties by scooping 1 - 2 Tbs of sausage mix out.
Roll into a ball and press out to make a small patty.
Cook on a hot griddle for 2-3 minutes per side or until fully cooked.
McGriddle Assembly:
Take one pancakes bun and place onto a plate.
Add sausage patty, egg and then top with a second pancake bun.
Cram into face!
